Veggie Shepherds Pie with Sweet Potato
(Vegan and Gluten Free)

Our Veggie Shepherds Pie is all about letting the vegetables shine and take centre stage.

The ultimate comfort food, we use a combination of onions, celery, mushrooms, broccoli, carrots, peas and tomatoes blended with ground almonds and buckwheat flakes topped with a yummy sweet potato mash.

A gluten free vegan treat that is packed to the brim with nutrients it is at its best served warm. Great to come home to in the colder months.

Care and Serving Instructions

After purchase, store in the fridge and use within 3-4 days.

Best served warm, heat in a medium oven 180°C/375°F or Gas mark 4 for approx 15-20 mins.

Can be microwaved, but the sweet potato mash is crispier when warmed.

Suitable for freezing, allow the veggie shepherds pie to thaw before following heating instructions above.

Allergens: nuts (almonds), celery.

Sweet Potato

Orange-fleshed sweet potatoes may be one of nature's unsurpassed sources of beta-carotene.

Beta carotene is converted by our bodies into Vitamin A where is used to do all sorts of good, including boosting our immunity and protecting from cancer and heart disease. They also have a low gylcemic index which means that they won't cause a sudden spike in your blood sugar levels.

Mushrooms

Mushrooms provide many of the nutritional attributes of other vegetables, as well as attributes more commonly found in meat, beans or grains.

Mushrooms are low in calories, fat-free, cholesterol-free and very low in sodium, yet they provide important nutrients, including selenium, potassium, riboflavin, niacin and vitamin D.

Buckwheat

Buckwheat is a native of Russia and although it's often referred to as a wholegrain it is actually a herb, not a cereal grain. It's gluten free and another nutrition superpower helping to lower risk of high cholesterol and high blood pressure.

Carrots

Carrots are nutritional heroes, they store a goldmine of nutrients. Along with the sweet potato, few other vegetables or fruit contain as much carotene as carrots.

Carrots are a truly versatile vegetable and an excellent source of vitamins B and C as well as calcium pectate, an extraordinary pectin fibre that has been found to have cholesterol-lowering properties.
