Roasted Tomato and Butter-Bean Galette (Vegan)

Our roasted tomato and butter-bean galette is encased with a wholewheat and white flour pastry made with local cold pressed extra virgin rapeseed oil from Stainswick Farm.

Inside, the butter-beans are pureed with roasted garlic, toasted cumin and sage, olive oil and lemon juice. They are topped with roasted tomatoes and a sprinkling of sea salt and thyme.

Equally good at room temperature or warmed up, this vegan galette has no cholesterol but is full to the brim with flavour.

Care and Serving Instructions

After purchase, store in the fridge and use within 3-4 days.

Can be eaten at room temperature or served warm, heat in a medium oven 180°C/375°F or Gas mark 4 for approx 10-15 mins.

Microwave - not recommended as pastry can go soggy, we prefer oven warmed.

Suitable for freezing, allow the tomato and butter-bean galette to thaw before following heating instructions above.

Good Stuff Inside

Cold Pressed Extra Virgin Rapeseed Oil

We use oil from Stainswick Farm in our Tomato and Butter-Bean Galette.

The Sanderson family is the 4th generation of farmers at Stainswick Farm located on the Oxfordshire/Wiltshire border. They’re passionate about providing their customers with a local, healthy, natural and fully traceable product.

The rapeseed is combined in the field and then transferred to the farm where the seeds are cleaned before being gently squeezed to extract the rapeseed oil.

This process is called cold pressing, this means the seeds are simply squeezed without heat or chemicals therefore retaining all of the natural goodness.

Cold pressed rapeseed oil is especially high in omega 3. In fact rapeseed oil contains ten times more omega 3 than olive oil. Cold pressed rapeseed oil also contains natural vitamin E, this is an antioxidant which works to keep the oil fresh.

Tomatoes

One of the most well known tomato health benefits is its Lycopene content. Lycopene is a vital anti-oxidant that helps in the fight against cancerous cell formation.

Tomatoes are also an excellent source of Vitamins C, A and B complex, potassium and phosphorous. Like red peppers – they're a great addition to the male diet for their prostate protecting capabilities.

Butter-Beans

Butter-beans are a very good source of cholesterol-lowering fibre. In addition to lowering cholesterol, their high fibre content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia.

Butter-beans are extremely high in molybdenum. This trace mineral doesn't get a lot of press, but it may be a help to those who experience sulphite sensitivity. Sulphites are commonly found in wine, pickles, processed meats and dried fruit.

Cumin

Cumin is a member of the carrot family and is pungent and bitter tasting. It is very beneficial to the digestive system, improves liver function and promotes the assimilation of other foods.

It can help relieve abdominal bloating, gas and colic as well as digestive related migraines and headaches.

Sage

If you've been overdoing the naughty rich foods, sage can assist in regulating bile flow helping to digest fatty foods. It is also used in treatments for colds/ flu and fevers and as a muscle relaxant for nervous disorders.

Thyme

Thyme is beneficial for the lungs, liver and stomach and relieves lung congestion.
